- 1 lb shrimp, peeled, deveined, and chopped into small pieces
- 1/2 cup rice flour
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 cup cold water
- 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup fresh mint leaves, chopped (optional)
- 1-2 small red chilies, finely chopped (optional)
- Vegetable oil for frying
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 2 tablespoons lime juice, freshly squeezed
- 1/4 cup warm water
- 1 garlic clove, minced
- 1-2 small red chilies, finely chopped (optional)
- 1 tablespoon rice vinegar (optional for extra tang)
Instructions
- In a mixing bowl, combine rice flour, all-purpose flour, baking powder, salt, and pepper. Whisk together until well blended.
- Gradually add cold water to create a smooth batter; stir in the egg until combined.
- Mix in chopped shrimp, green onions, cilantro, mint (if using), and chilies (if using).
- Heat vegetable oil in a frying pan over medium-high heat until hot but not smoking.
- Drop spoonfuls of batter into the hot oil; fry for 3–4 minutes on each side until golden brown.
- In a bowl, mix fish sauce, sugar, lime juice, warm water, minced garlic, and optional chilies for the dipping sauce.
