  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons lime juice, freshly squeezed
  • 1/4 cup warm water
  • 1 garlic clove, minced
  • 1-2 small red chilies, finely chopped (optional)
  • 1 tablespoon rice vinegar (optional for extra tang)

Instructions

  1. In a mixing bowl, combine rice flour, all-purpose flour, baking powder, salt, and pepper. Whisk together until well blended.
  2. Gradually add cold water to create a smooth batter; stir in the egg until combined.
  3. Mix in chopped shrimp, green onions, cilantro, mint (if using), and chilies (if using).
  4. Heat vegetable oil in a frying pan over medium-high heat until hot but not smoking.
  5. Drop spoonfuls of batter into the hot oil; fry for 3–4 minutes on each side until golden brown.
  6. In a bowl, mix fish sauce, sugar, lime juice, warm water, minced garlic, and optional chilies for the dipping sauce.
