- 2 ripe mangos (chopped)
- 1 clove garlic
- 1 tablespoon agave nectar
- 1/4 cup olive oil
- 1/4 cup sparkling grape juice vinegar or white apple vinegar
- 1 head green lettuce (torn)
- 1/2 English cucumber (sliced)
- 1 medium carrot (shredded)
- 1/2 red bell pepper (sliced)
- 1/4 large red onion (sliced)
- Chopped macadamia nuts and fresh cilantro for garnish
Instructions
- Blend the dressing by combining chopped mangos, garlic, agave nectar, olive oil, vinegar, and salt in a food processor until smooth.
- Prepare the salad greens by washing and tearing them into bite-sized pieces.
- Add cucumber, carrot, red bell pepper, red onion, and additional mango cubes to the greens.
- Toss the salad mixture with about 1/2 cup of the mango dressing, adjusting to taste.
- Garnish with chopped macadamia nuts and fresh cilantro before serving.
