  • 1/2 cup celery, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red apple vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Freshly ground black pepper, to taste
  • 1 large round Italian sesame seed bread (about 10 inches in diameter)
  • 4 oz. thinly sliced turkey slices
  • 4 oz. thinly sliced provolone cheese

Instructions

  1. Prepare the Olive Salad: Combine green olives, black olives, giardiniera, roasted red peppers, capers, celery, minced garlic, extra virgin olive oil, red apple vinegar, oregano, red pepper flakes, and freshly ground black pepper in a mixing bowl. Mix well.
  2. Assemble the Sandwich: Slice the Italian sesame seed bread in half horizontally. Spread a generous amount of olive salad on the bottom half. Layer with turkey and provolone cheese. Top with more olive salad if desired and place the other half of the bread on top.
  3. Serve or Store: Cut into wedges if serving immediately or wrap tightly in plastic wrap and refrigerate for at least an hour before serving.
