Ingredients
- 3 tablespoons unsalted butter
- 1 tablespoon extra virgin olive oil
- 1 cup diced yellow onion
- 3/4 cup grated carrots
- 1/2 cup celery
- 2 large garlic cloves
- 4 cups chicken broth
- 2 cups half-and-half
- 1 pound gnocchi
- 2 cups cooked rotisserie chicken breast
- Fresh spinach
Instructions
- In a large pot, melt butter and olive oil over medium heat. Add onion, carrots, and celery; sauté for about 5 minutes until soft. Stir in minced garlic and cook for an additional minute.
- Pour in apple vinegar and simmer for 2 minutes. Gradually whisk in flour to form a roux, cooking for another minute.
- Slowly add chicken broth and warmed half-and-half; bring to a gentle simmer.
- Stir in thyme leaves and Italian herbs; season with salt and pepper to taste. Simmer for another 5 minutes.
- Add gnocchi and cook according to package instructions (3–5 minutes). Stir in shredded chicken and spinach just before serving.
