- 45g (3 Tablespoons) unsalted butter, melted (for streusel topping)
- 2 large eggs, room temperature
- 1 teaspoon vanilla paste or extract
- 180g (¾ cup) buttermilk, room temperature
- 160g (1 heaped cup) strawberries, fresh or frozen
- 130g (¾ cup) white chocolate chips
Instructions
- Preheat the oven to 425°F (220°C). Line a muffin pan with paper liners.
- In a small bowl, mix melted butter, sugar, and flour for the streusel topping until crumbly; set aside.
- In another bowl, whisk together flour, baking powder, and salt.
- In a large bowl, combine melted butter, sugar, eggs, and vanilla; mix well.
- Gradually fold in the dry ingredients along with buttermilk until just combined.
- Gently add chopped strawberries and white chocolate chips into the batter.
- Divide the batter among muffin cups and sprinkle with streusel topping.
- Bake for 5 minutes at 425°F (220°C), then reduce heat to 350°F (180°C) and bake for an additional 15-18 minutes until golden brown.
- Cool in the pan for 10 minutes before transferring to a wire rack.
