  • 113g (½ cup) unsalted butter, melted and slightly cooled
  • 45g (3 Tablespoons) unsalted butter, melted (for streusel topping)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla paste or extract
  • 180g (¾ cup) buttermilk, room temperature
  • 160g (1 heaped cup) strawberries, fresh or frozen
  • 130g (¾ cup) white chocolate chips

Instructions

  1. Preheat the oven to 425°F (220°C). Line a muffin pan with paper liners.
  2. In a small bowl, mix melted butter, sugar, and flour for the streusel topping until crumbly; set aside.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, combine melted butter, sugar, eggs, and vanilla; mix well.
  5. Gradually fold in the dry ingredients along with buttermilk until just combined.
  6. Gently add chopped strawberries and white chocolate chips into the batter.
  7. Divide the batter among muffin cups and sprinkle with streusel topping.
  8. Bake for 5 minutes at 425°F (220°C), then reduce heat to 350°F (180°C) and bake for an additional 15-18 minutes until golden brown.
