- ½ cup butter (softened)
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 pound fresh strawberries
- 1 cup water
- ½ cup sugar
- 3 ounces plant-based gelling agent (like agar-agar)
- ¼ cup cornstarch
Instructions
- Preheat your oven as per the sugar cookie dough instructions.
- Spread the softened cookie dough evenly on a baking sheet and bake until lightly golden brown. Cool completely.
- In a mixing bowl, beat together softened cream cheese and butter until smooth. Gradually mix in powdered sugar and vanilla until creamy.
- Rinse and slice half of the strawberries for topping; set aside the other half for glazing.
- In a saucepan over medium heat, combine water and sugar until dissolved. Stir in the plant-based gelling agent until fully mixed, then add cornstarch and cook until thickened.
- Spread cream cheese frosting evenly over the cooled cookie base. Arrange sliced strawberries on top and drizzle glaze over them.
- Refrigerate for at least 30 minutes before slicing and serving.
