- 1 cup all-purpose flour
- 1/2 cup cold unsalted butter
- 2 tablespoons granulated sugar
- 1 pound fresh strawberries (diced)
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1/3 cup all-purpose flour
Instructions
- Preheat oven to 350°F (175°C).
- Prepare the shortbread crust by mixing flour, sugar, and salt; cut in cold butter until crumbly. Press into a greased 9×9 inch baking pan.
- Bake crust for about 15 minutes until lightly golden; cool slightly.
- For the custard layer, whisk together eggs, sugar, cream, and vanilla. Fold in diced strawberries and flour until combined.
- Pour custard over the cooled crust and bake for another 40–55 minutes until set.
- Allow to cool completely before topping with whipped topping and garnishing with whole strawberries.
