Ingredients

For the Chicken:
1 ½ pounds boneless, skinless chicken breasts or thighs
1 tablespoon + ⅓ cup tamari or soy sauce (divided)
2 tablespoons extra virgin olive oil
Black pepper, to taste
2 tablespoons orange juice
¼ cup honey
2–3 tablespoons chili paste
1 tablespoon fresh ginger, chopped
2 cloves garlic, chopped

For Serving:
3–4 cups cooked rice
Sliced cucumber
Sliced avocado
Kimchi
Fried wontons

For the Yum Yum Sauce:
⅓ cup mayonnaise (olive oil-based or regular)
2 tablespoons ketchup
1 tablespoon Worcestershire sauce (plant-based if desired)
1 teaspoon seasoned salt
¼ teaspoon cayenne pepper

Instructions

  • In a medium bowl, combine 1 tablespoon tamari/soy sauce, orange juice, honey, chili paste, ginger, and garlic to make the marinade.
  • Cut chicken into bite-sized pieces and toss with the marinade. Let sit for at least 15–20 minutes (or up to 2 hours in the fridge for more flavor).
  • Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until fully cooked and caramelized, about 6–8 minutes, stirring occasionally. Season with black pepper and the remaining ⅓ cup tamari/soy sauce during cooking.
  • While the chicken cooks, prepare the Yum Yum sauce by whisking together mayonnaise, ketchup, Worcestershire sauce, seasoned salt, and cayenne pepper in a small bowl. Adjust seasoning to taste.
  • Assemble the bowls by dividing cooked rice among serving bowls. Top with the cooked chicken, sliced cucumber, avocado, kimchi, and fried wontons.
  • Drizzle the Yum Yum sauce over each bowl and serve immediately.
