  • 1 can (10.75-ounce) condensed cream of mushroom soup
  • 1/2 cup beef broth or milk
  • 1 teaspoon dried paprika
  • 1 teaspoon dried parsley flakes (optional)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (to taste)
  • 2 cups shredded sharp cheddar cheese (divided)
  • 1/2 cup crispy fried onions or cooked, crumbled turkey bacon (for topping; optional)

Instructions

  1. Chop the onion and mince the garlic.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Transfer the beef to a slow cooker and add chopped onion, minced garlic, frozen diced potatoes, corn, diced tomatoes (with juices), cream of mushroom soup, broth or milk, and spices.
  4. Stir well and cook on low for about 3 hours or until potatoes are tender.
  5. Before serving, stir in one cup of shredded cheddar cheese until melted; top with remaining cheese.
