Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 bell peppers, chopped
- 2 carrots, sliced
- 2 cups beef broth
- 14 oz can diced tomatoes
- 2 tablespoons tomato paste
- Paprika, dried oregano, salt, and pepper
Instructions
- Heat vegetable oil in a skillet over medium-high heat. Sear the beef cubes until browned on all sides (about 3-4 minutes per side), then transfer to a slow cooker.
- In the same skillet, sauté onions, garlic, bell peppers, and carrots until softened (5-7 minutes). Transfer to the slow cooker.
- Add beef broth, diced tomatoes, tomato paste, paprika, oregano, salt, and pepper to the slow cooker. Stir until well combined.
- Cover and cook on low for 6-8 hours until the beef is tender.
- Serve garnished with fresh parsley and sour cream if desired.
