- 1.5 lbs boneless skinless chicken breasts or thighs
- 5 tbsp olive oil (3 tbsp for marinade, 2 tbsp for veggies)
- 2 tbsp freshly squeezed lemon juice
- 1 tsp lemon zest
- 3 garlic cloves (minced)
- 1 tbsp Greek seasoning
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 zucchini (sliced)
- 1 small red onion (sliced)
- 1 cup cherry tomatoes
- Optional: crumbled feta cheese and fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, Greek seasoning, and marinate the chicken for at least 10 minutes.
- On a sheet pan, arrange sliced bell peppers, zucchini, red onion, cherry tomatoes; drizzle with olive oil and sprinkle with oregano, salt, and black pepper.
- Place marinated chicken on top of the veggies.
- Roast in the oven for about 20 minutes until the chicken is cooked through and veggies are tender.
- Serve warm with optional feta cheese and parsley.
