  • 1 tsp lemon zest
  • 3 garlic cloves (minced)
  • 1 tbsp Greek seasoning
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 small red onion (sliced)
  • 1 cup cherry tomatoes
  • Optional: crumbled feta cheese and fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, Greek seasoning, and marinate the chicken for at least 10 minutes.
  3. On a sheet pan, arrange sliced bell peppers, zucchini, red onion, cherry tomatoes; drizzle with olive oil and sprinkle with oregano, salt, and black pepper.
  4. Place marinated chicken on top of the veggies.
