  • 8 oz flank, skirt, or sirloin steak (thinly sliced)
  • 2 (7 oz) packs cooked or frozen udon noodles
  • 1 tbsp vegetable or avocado oil
  • ½ small onion (thinly sliced)
  • 3 garlic cloves (minced)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sugar
  • 1 tbsp cornstarch mixed with 3 tbsp water (slurry)
  • 1 tsp freshly cracked black pepper
  • Optional toppings: sliced scallions, sesame seeds

Instructions

  1. Slice the beef thinly and season lightly with salt and pepper.
  2. In a bowl, whisk together soy sauce, hoisin sauce, sugar, black pepper, sesame oil, and cornstarch slurry; set aside.
  3. Heat oil in a large skillet over medium-high heat. Sear the beef until browned; remove from pan.
  4. Sauté garlic and onion in the same skillet until fragrant.
  5. Add udon noodles and sauce to the skillet; toss to combine and heat through for about 2–3 minutes.
  6. Return beef to the pan; mix everything together until heated and coated with sauce. Serve immediately with optional toppings.
