Ingredients

  • ⅓ cup canned pumpkin
  • ¼ teaspoon cinnamon
  • ½ cup honey
  • ½ cup vanilla protein powder
  • 1 ½ cups rolled oats
  • salt (to taste)
  • 1 ½ teaspoons pumpkin pie spice
  • ½ cup mini chocolate chips

Instructions

  1. In a mixing bowl, combine almond butter, pumpkin, cinnamon, honey, protein powder, oats, salt, and pumpkin pie spice. Mix well using a rubber spatula until fully blended.
  2. Gently fold in mini chocolate chips until evenly distributed.
  3. Scoop or roll the mixture into balls and place them on a baking sheet. Expect around 26 protein balls.
  4. Chill in the fridge until firm. Store in a ziplock bag for future snacking.
