- Optional: 1/2 to 2/3 cups chopped nuts (such as pecans or walnuts)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt; set aside.
- In another bowl, use an electric mixer to beat the softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla extract.
- Gradually add the dry mixture and sour cream alternately until just combined.
- Fold in the mashed bananas and any optional nuts.
- Pour the batter into the prepared pan and bake for about 50 to 55 minutes until golden brown and a toothpick inserted comes out clean.
- Let the bread cool in the pan for ten minutes before transferring it to a wire rack.
