Instructions
- Preheat oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, mix Greek yogurt, sugar, eggs, orange zest, orange juice, and vanilla extract until smooth. Gradually whisk in olive oil.
- Combine dry ingredients with wet mixture; stir gently until just combined.
- Pour batter into the prepared loaf pan and bake for 50-55 minutes until golden brown and a toothpick inserted comes out clean.
- Cool in the pan for 20 minutes before transferring to a wire rack.
