- 1 cup pitted dates, chopped
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 2 oranges
- 1/2 cup fresh orange juice
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp ground cardamom
- 1/4 tsp salt
- 1/4 cup honey
- 1 tbsp fresh orange juice
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch cake tin.
- In a bowl, whisk together flour, baking powder, baking soda, cardamom, and salt.
- Cream butter and brown sugar in a separate bowl until fluffy; add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract, orange zest, and juice. Fold in chopped dates.
- Gradually combine dry ingredients with wet mixture until just mixed; do not overmix.
- Pour batter into the prepared tin and bake for approximately 40–45 minutes or until a toothpick comes out clean.
- For the honey drizzle, warm honey with orange juice until combined and drizzle over the warm cake.
