- 1 whole seedless navel orange (washed, quartered, seeds removed)
- 4 eggs (at room temperature)
- 3/4 cup olive oil
- 1 1/4 cup granulated sugar
- 1/4 cup sour cream
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1 cup confectioners' sugar
- 1-2 Tablespoons orange juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 loaf pan.
- In a blender, combine the quartered navel orange, eggs, olive oil, granulated sugar, sour cream, and vanilla. Blend until smooth.
- Add the all-purpose flour, baking powder, and sea salt to the blender. Pulse gently until just combined—do not overmix.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick comes out clean from the center.
- Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
