Ingredients
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup freeze-dried raspberries
- 1 1/2 cups white chocolate (for coating)
- Optional: sprinkles, crushed nuts, or raspberry sauce for topping
Instructions
- In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Grind freeze-dried raspberries into a fine powder using a food processor and mix into the cream cheese mixture until well combined.
- Chill the filling for at least 30 minutes until firm enough to scoop.
- Use a cookie scoop to portion out the filling and roll into balls. Freeze for 15-20 minutes.
- Melt white chocolate in a double boiler or microwave-safe bowl until smooth; thin with vegetable oil if necessary.
- Dip each frozen truffle into melted chocolate and place back on parchment paper; add toppings while still wet. Let set.
