Ingredients

  • 2 cups cooked shredded chicken
  • 1 Tbsp extra virgin olive oil
  • 4 cups organic chicken stock
  • 5-6 organic sundried tomatoes
  • 1 Tbsp tomato paste, organic
  • 1 1/2 cups organic heavy cream
  • 3 Tbsps cooking apple vinegar (can substitute with chicken stock)
  • 1/2 lemon, freshly-squeezed
  • 16 oz. package potato gnocchi
  • 1 cup chopped organic kale
  • 1 cup freshly grated parmesan cheese

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Sauté minced garlic until fragrant (about 2 minutes).
  2. Stir in flour and cook for an additional 2 minutes. Gradually whisk in chicken stock, bringing the mixture to a simmer.
  3. Add shredded chicken, sundried tomatoes, tomato paste, Tuscan blend seasoning, salt, and cooking apple vinegar; simmer for another 5 minutes.
  4. Reduce heat and mix in heavy cream and gnocchi according to package directions until tender.
  5. Fold in chopped kale and lemon juice; stir in parmesan until melted.
  6. Serve hot with optional additional parmesan on top.
