Ingredients
- 2 cups cooked shredded chicken
- 1 Tbsp extra virgin olive oil
- 4 cups organic chicken stock
- 5-6 organic sundried tomatoes
- 1 Tbsp tomato paste, organic
- 1 1/2 cups organic heavy cream
- 3 Tbsps cooking apple vinegar (can substitute with chicken stock)
- 1/2 lemon, freshly-squeezed
- 16 oz. package potato gnocchi
- 1 cup chopped organic kale
- 1 cup freshly grated parmesan cheese
Instructions
- In a large pot, heat olive oil and butter over medium heat. Sauté minced garlic until fragrant (about 2 minutes).
- Stir in flour and cook for an additional 2 minutes. Gradually whisk in chicken stock, bringing the mixture to a simmer.
- Add shredded chicken, sundried tomatoes, tomato paste, Tuscan blend seasoning, salt, and cooking apple vinegar; simmer for another 5 minutes.
- Reduce heat and mix in heavy cream and gnocchi according to package directions until tender.
- Fold in chopped kale and lemon juice; stir in parmesan until melted.
- Serve hot with optional additional parmesan on top.
