- 3-4 medium ripe bananas
- 2 Tbsp brown sugar
- 1 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup pure maple syrup
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
- In a small bowl, mash the ripe bananas with brown sugar, vanilla extract, and ground cinnamon; set aside.
- In a large bowl, cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time into the butter mixture, beating well after each addition.
- Sift together all-purpose flour, baking soda, and salt in another bowl. Gradually stir into the butter mixture until just combined.
- Gently fold in the mashed banana mixture until well blended.
- Pour batter into prepared loaf pan and bake for about 30 minutes at 350°F; lower temperature to 325°F for an additional 15-20 minutes until a cake tester comes out clean.
- Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
