  • 1 1/2 tsp vanilla extract

  • 1 cup unsalted butter, softened

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup pure maple syrup
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a small bowl, mash the ripe bananas with brown sugar, vanilla extract, and ground cinnamon; set aside.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy.
  4. Add eggs one at a time into the butter mixture, beating well after each addition.
  5. Sift together all-purpose flour, baking soda, and salt in another bowl. Gradually stir into the butter mixture until just combined.
  6. Gently fold in the mashed banana mixture until well blended.
  7. Pour batter into prepared loaf pan and bake for about 30 minutes at 350°F; lower temperature to 325°F for an additional 15-20 minutes until a cake tester comes out clean.
