Instructions
- In a large bowl, whisk together the eggs, milk, and salt until well combined.
- Heat butter in a non-stick skillet over medium heat. Add onion, bell peppers, and mushrooms; cook for about 3–5 minutes until softened.
- Stir in tomatoes and turkey; cook for an additional minute.
- Pour the egg mixture into the skillet and gently scramble with a spatula until cooked to your liking.
- Sprinkle cheddar cheese on top while still on heat; let it melt slightly before serving. Garnish with chives if desired.
