- 800 gm carrots
- 1 tsp salt
- 1 tsp honey
- 1 whole head of garlic
- 3 tbsp white vinegar
- 1/2 tsp coriander powder
- 1/4 tsp cayenne pepper powder
- 1/4 tsp paprika powder
- 1/2 tsp black pepper powder
- 3 tbsp olive oil
Instructions
- Shred the carrots into a large mixing bowl.
- Add salt, honey, and vinegar; massage gently. Let sit for 5–10 minutes.
- Mince the garlic and add it to the bowl along with coriander powder, cayenne pepper, and black pepper; mix well.
- Warm the olive oil in a pan and pour it over the carrot mixture; stir to combine.
- Taste and adjust seasoning if needed. Store in an airtight glass jar in the fridge for up to 5 days.
