  • 1 tsp salt
  • 1 tsp honey
  • 1 whole head of garlic
  • 3 tbsp white vinegar
  • 1/2 tsp coriander powder
  • 1/4 tsp cayenne pepper powder
  • 1/4 tsp paprika powder
  • 1/2 tsp black pepper powder
  • 3 tbsp olive oil

Instructions

  1. Shred the carrots into a large mixing bowl.
  2. Add salt, honey, and vinegar; massage gently. Let sit for 5–10 minutes.
  3. Mince the garlic and add it to the bowl along with coriander powder, cayenne pepper, and black pepper; mix well.
  4. Warm the olive oil in a pan and pour it over the carrot mixture; stir to combine.
  5. Taste and adjust seasoning if needed. Store in an airtight glass jar in the fridge for up to 5 days.
