- 2 1/4 cups mashed overripe bananas
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 cup butter
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Mash the overripe bananas until you have about 2 1/4 cups.
- In a large bowl, mix the flour, salt, baking soda, and nutmeg.
- In another bowl, cream together the butter with both sugars. Add in cinnamon, eggs, vanilla extract, and mashed bananas; stir until well combined.
- Gently fold the banana mixture into the dry ingredients until just combined—be careful not to overmix.
- Pour the batter into a greased pan and cover it with foil. Place it on a trivet inside your Instant Pot with one cup of water at the bottom.
- Seal the lid and set to manual mode for 50 minutes. After cooking, perform a quick release.
- Use foil handles to carefully remove the pan from the pot; allow it to cool before slicing.
