  • Total Time: 1 hour 5 minutes
  • Yield: Makes approximately 10 servings 1x

Ingredients

Scale
  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the overripe bananas until you have about 2 1/4 cups.
  2. In a large bowl, mix the flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together the butter with both sugars. Add in cinnamon, eggs, vanilla extract, and mashed bananas; stir until well combined.
  4. Gently fold the banana mixture into the dry ingredients until just combined—be careful not to overmix.
  5. Pour the batter into a greased pan and cover it with foil. Place it on a trivet inside your Instant Pot with one cup of water at the bottom.
  6. Seal the lid and set to manual mode for 50 minutes. After cooking, perform a quick release.
  7. Use foil handles to carefully remove the pan from the pot; allow it to cool before slicing.
