Ingredients
- 1 package croissant dough (store-bought)
- 2 cups whole milk (or non-dairy milk)
- 0.5 cups granulated sugar (or coconut sugar)
- 0.25 cups cornstarch
- 4 egg yolks
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter (or vegan butter)
- 1 cup heavy cream (or coconut cream)
- 8 ounces semi-sweet chocolate
Instructions
- Prepare the custard by heating the milk in a saucepan. In a separate bowl, whisk together sugar, cornstarch, and egg yolks until smooth. Slowly pour warm milk into the egg mixture while whisking continuously.
- Return mixture to the saucepan and cook over medium heat until thickened. Stir in vanilla extract and butter; cool before using.
- For the ganache, heat heavy cream until simmering, remove from heat, add chopped chocolate, let sit, then whisk until smooth.
- Preheat oven according to croissant dough instructions; roll out and cut triangles from the dough.
- Spoon cooled custard onto each triangle base and roll tightly from base to tip. Place on a parchment-lined baking sheet.
- Bake until golden brown; cool slightly before drizzling or dipping in ganache.
