  • 8 ounces Cream cheese
  • 1/4 cup Granulated sugar
  • 1 large Egg yolk
  • 1 teaspoon Vanilla extract
  • 1 cup Peach slices
  • 1 tablespoon Honey drizzle
  • 1/2 cup Crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and granulated sugar until fluffy. Add eggs and honey one by one, mixing well.
  4. Gradually add the dry ingredients to the wet mixture while alternating with whole milk. Gently fold in diced peaches.
  5. For the cream cheese filling, mix softened cream cheese and sugar until smooth; then add egg yolk and vanilla extract.
  6. Fill cupcake liners with batter, add a dollop of cream cheese mixture on top, cover with remaining batter.
