- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
- 1/2 cup Unsalted butter
- 1 cup Granulated sugar
- 2 large Eggs
- 1/4 cup Honey
- 1/2 cup Whole milk
- 1 teaspoon Vanilla extract
- 2 cups Fresh peaches
- 8 ounces Cream cheese
- 1/4 cup Granulated sugar
- 1 large Egg yolk
- 1 teaspoon Vanilla extract
- 1 cup Peach slices
- 1 tablespoon Honey drizzle
- 1/2 cup Crushed graham crackers
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat softened butter and granulated sugar until fluffy. Add eggs and honey one by one, mixing well.
- Gradually add the dry ingredients to the wet mixture while alternating with whole milk. Gently fold in diced peaches.
- For the cream cheese filling, mix softened cream cheese and sugar until smooth; then add egg yolk and vanilla extract.
- Fill cupcake liners with batter, add a dollop of cream cheese mixture on top, cover with remaining batter.
- Bake for about 22 minutes or until a toothpick comes out clean. Allow cooling before serving.
