- 1 cup rolled oats
- 1 cup warm milk (240 ml)
- 2 teaspoons active dry yeast
- 1/4 cup warm water (60 ml)
- 1/4 cup honey (60 ml)
- 1/4 cup melted butter (60 ml)
- 3 cups all-purpose flour (375 g)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- In a small bowl, combine rolled oats with warm milk and let sit for 10 minutes to soften.
- In another bowl, dissolve yeast in warm water and add one tablespoon of honey. Let it sit until bubbly (5-10 mins).
- Add softened oats, melted butter, and remaining honey to the yeast mixture; stir to combine.
- Gradually mix in flour, cinnamon, and salt until a shaggy dough forms.
- Knead on a floured surface for about 8-10 minutes until smooth.
- Place dough in an oiled bowl, cover with a damp cloth, and let rise for 1-1.5 hours until doubled.
- Punch down the dough, shape into a log, and place in a greased loaf pan. Let rise again for 30-40 minutes.
- Preheat oven to 375°F (190°C) and bake the bread for 30-35 minutes until golden brown.
