- 1.75 cups Warm Water (105-115°F)
- 2 tsp Sugar (optional)
- 1 packet Active Dry Yeast
- 2 cups Bread Flour
- 2 cups All-Purpose Flour
- 2 tsp Salt
- 6 tbsp Olive Oil (divided)
- 1 jar Raspberry Preserves (or other jam)
- 2 cups Confectioners’ Sugar
- 2-4 tbsp Whole Milk
Instructions
- Activate the yeast by mixing warm water and sugar in a bowl; sprinkle yeast and let sit until bubbly.
- Combine flours and salt in a bowl; create a well, add yeast mixture and olive oil, then mix until combined.
- Knead the dough for about 5-7 minutes until smooth; let rise covered until doubled in size (60-90 minutes).
- Preheat oven to 400°F. Shape dough into a rectangle on a lined baking sheet; create indentations and fill with jam.
- Drizzle remaining olive oil over top and bake for about 22 minutes until golden brown.
- Mix confectioners’ sugar with milk to create glaze; drizzle over cooled focaccia before serving.
