- 1 cup rolled oats
- 1 large apple, peeled and chopped
- 3 tablespoons honey
- 2 large eggs
- 1 tablespoon unsalted butter or coconut oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (180°C).
- In a blender or mixing bowl, combine all ingredients except 1/4 cup of oats and blend until smooth.
- Fold in the reserved oats for added texture.
- Line a small baking pan with parchment paper and pour in the batter.
- Bake for 20 to 30 minutes or until a toothpick comes out clean.
- Let cool completely before slicing and serving.
