- 4 ripe bananas
- 1 large egg
- 1 tablespoon vanilla extract
- 3 tablespoons light brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder

- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 2 tablespoons unsalted butter (or applesauce)
Instructions
- Preheat your oven to 350°F (175°C). Grease a standard 9×5 inch loaf pan.
- In a mixing bowl, mash the bananas and mix in the egg, vanilla extract, light brown sugar, granulated sugar, and cinnamon until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Stir in melted butter or applesauce gently.
- Pour the batter into the prepared loaf pan and bake for 35-45 minutes or until a toothpick inserted comes out clean.
- Allow cooling for about 10 minutes in the pan before transferring to a wire rack.
