  • 1 pineapple
  • 5 cups chopped romaine lettuce
  • 1 avocado
  • 1/4 cup lime juice
  • 1 tbsp olive oil
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1/4 cup extra virgin olive oil
  • 2 tbsp honey
  • 1/2 red onion
  • 1/2 cucumber
  • 1 cup cherry tomatoes

Instructions

  1. Preheat your grill to medium-high heat.
  2. Prepare the pineapple by cutting off the skin, removing the core, and slicing into rings. Drizzle with olive oil.
  3. Season the chicken breasts with olive oil, pink sea salt, black pepper, dried thyme, garlic powder, and red pepper flakes.
  4. Grill the chicken for about 7 minutes on each side and the pineapple for 3-4 minutes on each side until caramelized.
  5. While grilling, chop your romaine lettuce, cucumber, onion, tomatoes, and avocado.
  6. Whisk together dressing ingredients: olive oil, lime juice, honey, garlic powder, pink sea salt, black pepper, and red pepper flakes.
  7. In a large serving bowl, layer chopped lettuce first followed by veggies; top with sliced grilled chicken and pineapple.
  8. Drizzle dressing over the salad before serving.
