- 2 large chicken breasts
- 1 pineapple
- 5 cups chopped romaine lettuce
- 1 avocado
- 1/4 cup lime juice
- 1 tbsp olive oil
- 1 tsp pink sea salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1/4 cup extra virgin olive oil
- 2 tbsp honey
- 1/2 red onion
- 1/2 cucumber
- 1 cup cherry tomatoes
Instructions
- Preheat your grill to medium-high heat.
- Prepare the pineapple by cutting off the skin, removing the core, and slicing into rings. Drizzle with olive oil.
- Season the chicken breasts with olive oil, pink sea salt, black pepper, dried thyme, garlic powder, and red pepper flakes.
- Grill the chicken for about 7 minutes on each side and the pineapple for 3-4 minutes on each side until caramelized.
- While grilling, chop your romaine lettuce, cucumber, onion, tomatoes, and avocado.
- Whisk together dressing ingredients: olive oil, lime juice, honey, garlic powder, pink sea salt, black pepper, and red pepper flakes.
- In a large serving bowl, layer chopped lettuce first followed by veggies; top with sliced grilled chicken and pineapple.
- Drizzle dressing over the salad before serving.
