- 1 unbaked gluten-free pie crust (9-inch)
- 1 cup half-and-half or unsweetened almond/coconut milk
- 4 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 cup cooked chopped turkey bacon
- 1/2 cup diced tomatoes
- 3 tablespoons chopped green onions
- 1 1/2 cups shredded cheddar cheese (or dairy-free cheese)
Instructions
- Preheat your oven to 350°F (177°C).
- In a mixing bowl, whisk together the eggs, half-and-half (or milk), salt, and pepper until fully combined.
- Layer the cooked turkey bacon evenly in the gluten-free pie crust. Top with shredded cheddar cheese and sprinkle green onions over it.
- Pour the egg mixture over the layered ingredients and finish by sprinkling an additional 1/2 cup of cheese on top.
- Bake on the middle rack for about 40-50 minutes total, covering loosely with aluminum foil after 20 minutes to prevent over-browning. The quiche is done when a knife inserted into the center comes out clean.
- Let cool for 5-10 minutes before slicing.
