  • 1 cup half-and-half or unsweetened almond/coconut milk
  • 4 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 cup cooked chopped turkey bacon
  • 1/2 cup diced tomatoes
  • 3 tablespoons chopped green onions
  • 1 1/2 cups shredded cheddar cheese (or dairy-free cheese)

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. In a mixing bowl, whisk together the eggs, half-and-half (or milk), salt, and pepper until fully combined.
  3. Layer the cooked turkey bacon evenly in the gluten-free pie crust. Top with shredded cheddar cheese and sprinkle green onions over it.
  4. Pour the egg mixture over the layered ingredients and finish by sprinkling an additional 1/2 cup of cheese on top.
  5. Bake on the middle rack for about 40-50 minutes total, covering loosely with aluminum foil after 20 minutes to prevent over-browning. The quiche is done when a knife inserted into the center comes out clean.
