  • 1 cup Mike's Mighty Good Spicy Beef Ramen
  • 1 lb ground beef
  • 1/2 cup panko bread crumbs
  • 1 egg
  • 2 green onions (sliced)
  • 1 tsp sesame oil
  • 1 tbsp minced garlic
  • 1 tsp minced ginger
  • 1/4 cup cornstarch
  • 1/2 cup vegetable stock
  • 1/4 cup soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 2 tbsp hoisin sauce
  • Sliced green chilis for garnish
  • Black sesame seeds for garnish

Instructions

  1. In a large mixing bowl, combine ground beef, panko bread crumbs, egg, green onions, sesame oil, minced garlic, and minced ginger. Mix well until evenly combined.
  2. Shape the mixture into small meatballs and coat each in cornstarch.
  3. Heat vegetable oil in a frying pan over medium-high heat. Cook the meatballs until browned on all sides; drain excess fat.
  4. In the same pan, add vegetable stock, soy sauce, apple cider vinegar, honey, and hoisin sauce. Return the meatballs and simmer for about 8 minutes until cooked through.
  5. Prepare the ramen noodles according to package instructions and assemble your bowl by topping the noodles with meatballs and garnishes.
