- 2 tbsp Lemon zest
- 1 cup Granulated sugar
- 1/2 cup Butter (unsalted)
- 1/4 tsp Kosher salt
- 2 Eggs (large)
- 4 Egg yolks (large)
Instructions
- Prepare the tart dough by mixing flour, powdered sugar, and salt in a food processor. Add cold cubed butter and mix until pea-sized pieces form.
- Incorporate an egg and vanilla extract until the dough comes together. Avoid overmixing.
- Chill the dough for at least one hour wrapped in plastic wrap.
- Roll out the chilled dough into a circle and fit it into a 9-inch tart pan, trimming excess edges.
- Prick holes in the crust and freeze for 20 minutes before baking at 350°F for 15-20 minutes until golden brown.
- For the filling, whisk together lemon juice, lemon zest, granulated sugar, butter, eggs, and salt until smooth. Pour into the baked crust.
- Bake for an additional 20-25 minutes until set but slightly jiggly in the center.
- Cool completely before slicing and serve as desired.
