Ingredients
- 2 cups sugar
- 1 cup softened butter
- 3 large eggs
- 2 1/2 cups cake flour
- 1 cup baking cocoa (sifted)
- 2 teaspoons baking soda
- 1/2 cup instant chocolate pudding mix
- 2 1/4 cups buttermilk
- For the ganache: 1 cup semi-sweet chocolate chips
- 1/2 cup water
- 1/2 cup butter
- 3 1/2 cups powdered sugar
- 3 tablespoons heavy cream (more or less for consistency)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together cake flour, sifted cocoa powder, baking soda, salt, and pudding mix.
- Gradually add the dry mixture to the wet mixture alternately with buttermilk until just combined; do not overmix.
- Divide the batter evenly between the prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
- For the ganache icing, melt butter with cocoa powder and water in a saucepan over low heat. Stir in powdered sugar until smooth; adjust consistency with heavy cream as needed.
- Once cooled, layer the cakes with ganache icing in between and frost the top and sides.
