  • For the ganache: 1 cup semi-sweet chocolate chips
  • 1/2 cup water
  • 1/2 cup butter
  • 3 1/2 cups powdered sugar
  • 3 tablespoons heavy cream (more or less for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. In another bowl, whisk together cake flour, sifted cocoa powder, baking soda, salt, and pudding mix.
  4. Gradually add the dry mixture to the wet mixture alternately with buttermilk until just combined; do not overmix.
  5. Divide the batter evenly between the prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. For the ganache icing, melt butter with cocoa powder and water in a saucepan over low heat. Stir in powdered sugar until smooth; adjust consistency with heavy cream as needed.
  7. Once cooled, layer the cakes with ganache icing in between and frost the top and sides.
