Ingredients
- 10.5 cups water or vegetable broth
- 1 yellow onion
- 2 celery ribs
- 3 carrots
- 4 garlic cloves
- Salt to taste
- 1 cup pastina (small pasta)
- Grated Parmigiano for garnish
Instructions
- In a large pot, combine water (or broth), onion, celery, carrots, garlic, and salt. Bring to a boil.
- Reduce heat to medium-low and simmer for about 45 minutes until vegetables are soft.
- Remove cooked vegetables and blend them with some broth until smooth, then return to the pot.
- Boil pastina separately in salted water according to package instructions.
- Serve by adding pastina to bowls and ladling hot broth over it. Garnish with grated Parmigiano.
