Ingredients
- 1 tablespoon olive oil
- 12 oz Italian Beef sausage (casings removed)
- 10 oz potato gnocchi
- 1 cup heavy cream
- 1/3 cup beef broth
- 1 cup pumpkin puree
- 3 cloves garlic (minced)
- 4 oz fresh spinach
- 2 tablespoons fresh sage (chopped)
- 2 tablespoons fresh thyme
- Salt and coarsely ground black pepper (to taste)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced beef sausage and cook for about 6 minutes until browned on both sides; drain excess fat.
- Stir in gnocchi, heavy cream, and beef broth; bring to a boil, cover, and cook for 5 minutes.
- Add pumpkin puree and garlic; stir in spinach and cook until wilted (about 3 minutes).
- Mix in half of the sage and thyme; season with salt and pepper to taste.
- Serve hot, garnished with remaining herbs.
