- 1 lb Ground Beef (or turkey/meat alternative)
- 1 large Onion (chopped)
- 3 cloves Garlic (minced)
- 4 cups Beef Broth (or vegetable broth)
- 14.5 oz Diced Tomatoes (canned with juice)
- 1 cup Corn (canned or frozen)
- 15 oz Black Beans (drained and rinsed)
- 2 medium Potatoes (diced)
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- Sauté chopped onion in a large pot over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
- Add ground beef and cook until browned, breaking it apart as it cooks (7-10 minutes). Drain excess fat if necessary.
- Stir in diced potatoes, corn, black beans, diced tomatoes, spices, and broth; bring to a boil.
- Reduce heat to low and simmer uncovered for about 20 minutes until potatoes are tender.
- Stir in heavy cream (or coconut milk) and shredded cheese until melted.
