  • 7-9 lasagna pieces (broken)
  • 1 cup chopped chicken (cooked)
  • 1 cup heavy cream
  • ¾ cup mozzarella cheese (shredded)
  • 2 cups chopped spinach

Instructions

  1. Sauté chopped onion, leek, carrot, and garlic in olive oil until softened. Season with Italian herbs, salt, and pepper.
  2. Stir in flour for 1-2 minutes; deglaze with vinegar.
  3. Add chicken stock and water; bring to a simmer for 20 minutes.
  4. Remove thyme and add broken lasagna pieces directly into the soup.
  5. Stir in heavy cream, mozzarella cheese, chopped chicken, and spinach.
  6. Serve garnished with fresh basil if desired.
