- 2 cups flour
- 1 cup sugar
- 1 cup freshly grated zucchini (pressed to remove excess water)
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter
- 1 tablespoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×5 inch loaf pan.
- In a bowl, whisk together flour, baking soda, baking powder, and salt.
- In another bowl, blend sugar, eggs, vegetable oil, vanilla extract, and zucchini.
- Combine dry ingredients with wet ingredients until just mixed.
- For the filling, mix melted butter, sugar, and cinnamon until well combined.
- Layer half of the batter in the pan, add half of the cinnamon filling and swirl. Repeat with remaining batter and filling.
- Bake for 45-55 minutes or until a toothpick comes out clean.
- Cool slightly before drizzling with a glaze made from powdered sugar and milk.
