  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, blend sugar, eggs, vegetable oil, vanilla extract, and zucchini.
  4. Combine dry ingredients with wet ingredients until just mixed.
  5. For the filling, mix melted butter, sugar, and cinnamon until well combined.
  6. Layer half of the batter in the pan, add half of the cinnamon filling and swirl. Repeat with remaining batter and filling.
  7. Bake for 45-55 minutes or until a toothpick comes out clean.
  8. Cool slightly before drizzling with a glaze made from powdered sugar and milk.
