Ingredients
- 2 cans chickpeas (drained and rinsed)
- 8 oz feta cheese (crumbled)
- 1/2 cup red onion (diced)
- 1 English cucumber (diced)
- 1/2 cup olive oil
- 2 tbsp fresh lemon juice
- 1/4 cup red apple vinegar
- Fresh herbs (optional)
Instructions
- In a mixing bowl or jar, combine olive oil, lemon juice, red apple vinegar, Dijon mustard, oregano, garlic, parsley, salt, and pepper. Whisk until well combined.
- Add the drained chickpeas, diced cucumber, diced onion, and crumbled feta into the bowl with the dressing. If using fresh herbs, add them now.
- Toss everything together until well mixed.
- Cover and refrigerate for at least two hours before serving to enhance flavors.
