Ingredients

For the Casserole Base
1 box Stove Top Stuffing (chicken flavored)
1–2 lbs boneless, skinless chicken breasts, diced
1 can cream of chicken soup
⅓ cup sour cream
16 oz frozen mixed vegetables
Salt and pepper, to taste
4–5 garlic cloves, minced

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  • In a large skillet, cook the diced chicken over medium heat until no longer pink. Add the minced garlic and cook for 1–2 minutes until fragrant. Season with salt and pepper.
  • In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, frozen mixed vegetables, and stuffing mix. Stir until evenly combined.
  • Transfer the mixture to the prepared baking dish and spread evenly.
  • Cover with foil and bake for 25–30 minutes. Remove the foil and bake an additional 10 minutes until the casserole is heated through and the top is lightly golden.
  • Let cool slightly before serving warm.
