- 1 cup sour cream
- 1 1/4 cups butter, softened
- 5 cups powdered sugar
- 1/4 cup cherry juice
- 3 teaspoons vanilla extract
- 8-10 maraschino cherries, slightly chopped
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch cake pans by spraying them with non-stick cooking spray.
- In a medium bowl, mix together the flour, baking soda, baking powder, and salt; set aside.
- In a large bowl, beat the eggs and sugar until light and creamy. Add softened butter and almond extract; blend well.
- Gradually incorporate dry ingredients into the wet mixture until just combined. Stir in sour cream until smooth.
- Divide the batter between the prepared pans and bake for 23-25 minutes or until a toothpick comes out clean. Allow cakes to cool before frosting.
