  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar

Instructions

  1. Shred the carrots and set aside to absorb excess moisture.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar with an electric mixer until fluffy. Add eggs one at a time, then mix in vanilla extract, carrots, and oats.
