- 1 cup salted butter, softened
- 3/4 cup granulated sugar
- 1 1/2 cups brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup shredded carrots
- 3 cups old-fashioned oats
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 8 ounces cream cheese, softened
- 4 cups powdered sugar
Instructions
- Shred the carrots and set aside to absorb excess moisture.
- In a large bowl, cream together butter, granulated sugar, and brown sugar with an electric mixer until fluffy. Add eggs one at a time, then mix in vanilla extract, carrots, and oats.
- In another bowl, sift together flour, salt, baking soda, cinnamon, and ginger. Gradually add dry ingredients to the wet mixture until just combined.
- Chill the cookie dough for about 20–30 minutes before scooping onto a parchment-lined baking sheet.
- Bake at 350°F for 12–15 minutes or until golden brown around the edges. Allow cookies to cool completely before frosting.
