  • 12 cups cubed French bread
  • 3 pears, peeled and diced
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • ½ cup sugar
  • 2 tbsp brown sugar
  • 2 tsp ground cardamom (divided)
  • Kosher salt
  • Optional toppings: raw turbinado sugar, whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine cubed bread, diced pears, brown sugar, and 1 tsp ground cardamom.
  2. Whisk together eggs, milk, heavy cream, sugar, remaining cardamom, and salt in another bowl until blended. Pour over the bread mixture and let soak for 15 minutes.
  3. Grease a baking dish with butter and transfer the soaked mixture into it. If desired, sprinkle raw turbinado sugar on top.
  4. Bake for about 60 minutes until golden brown and set in the center.
  5. Serve warm with a drizzle of homemade cardamom syrup.
