Instructions

  1. Wash the oranges thoroughly using a vegetable brush.
  2. Score each orange peel with four lengthwise cuts and slice off both ends.
  3. Remove the peel sections and cut into 1/4-inch wide strips.
  4. Blanch the peels in boiling water twice, draining each time.
  5. Simmer peels in 2 cups water and 1 cup sugar for about 30-35 minutes until slightly translucent.
  6. Cool in syrup for 5 minutes before transferring to a drying rack.
  7. Allow to dry for at least 8 hours (ideally up to 24 hours).
  8. Optionally coat in sugar or dip in melted chocolate before serving.
