Ingredients
- 15 ounces yellow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1/2 cup peach nectar or peach juice
- 1 pound peeled and chopped peaches (about 3-4)
- 1/2 cup unsalted butter, cut in pieces
- 1/2 cup heavy cream
- 1 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 1/2 cups confectioner’s sugar, sifted
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×12 inch baking pan.
- In a mixing bowl, combine yellow cake mix, eggs, vegetable oil, and peach nectar until smooth. Gently fold in chopped peaches.
- Pour the batter into the prepared pan and bake for approximately 28 minutes or until a toothpick inserted comes out clean.
- For the frosting, heat butter, heavy cream, and brown sugar in a saucepan until boiling. Stir in vanilla and sifted confectioner's sugar until smooth.
- Once the cake cools slightly, pour the warm frosting evenly over it and allow to set before serving.
