- 1 cup Buttermilk
- 1/2 cup Unsalted Butter
- 2 teaspoons Vanilla Extract
- 1 cup Hot Brewed Coffee
- 1 cup Granulated Sugar (for pudding)
- 1/4 cup Cornstarch
- 1/4 teaspoon Salt (for pudding)
- 1 cup Water
- 1 cup Heavy Cream (for frosting)
- 8 ounces Semisweet or Bittersweet Chocolate
- 4 ounces Unsweetened Chocolate
- 1 cup Unsalted Butter (for frosting)
- 4 cups Confectioners Sugar
- 2 teaspoons Vanilla Extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In one bowl, mix flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, cream together butter and sugar until light and fluffy.
- Add eggs and vanilla to the butter mixture; combine buttermilk and hot coffee in a separate bowl.
- Gradually mix wet ingredients into the creamed mixture followed by dry ingredients until just combined.
- Pour batter into prepared pans and bake for 30–35 minutes until a toothpick inserted comes out clean.
- Cool cakes completely before assembling with chocolate pudding filling and frosting.
