- 1/3 cup confectioners’ sugar
- 6 ounces raspberry preserves
- 8 slices brioche bread (1 inch thick)
- 4 large eggs (lightly beaten)
- 1 cup milk
- 1 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- Unsalted butter (for cooking)
Instructions
- In a stand mixer, blend softened cream cheese, lemon juice, confectioners’ sugar, and vanilla until smooth.
- Whisk together eggs, milk, vanilla, and cinnamon in a bowl; pour into a baking dish.
- Cut pockets in each brioche slice; fill with cream cheese mixture and raspberry preserves.
- Heat butter in a nonstick pan over medium heat; dip stuffed brioche in egg mixture and cook until golden brown on both sides.
- Serve warm topped with maple syrup, fresh berries, and confectioners’ sugar.
