- 4 ripe bananas
- ½ cup granulated sugar
- 2 tablespoons brown sugar
- 1 large egg (beaten)
- 3 ounces semi-sweet chocolate
Instructions
- Melt the butter in a saucepan over low heat until fully liquid.
- Stir in the espresso powder into the melted butter until well combined.
- Mash the ripe bananas in a mixing bowl using a fork until smooth.
- Mix the melted butter and espresso into the mashed bananas thoroughly.
- Add both sugars to the mixture and stir until combined.
- Incorporate the beaten egg and mix well.
- Gradually add flour, baking soda, and salt; mix just until combined.
- Gently fold in chocolate chunks.
- Prepare your loaf pan by greasing it or lining it with baking paper.
- Pour batter into the prepared pan and bake at 375°F for about 40 minutes or until a toothpick inserted comes out clean.
