  • Neutral frying oil (vegetable, canola, or avocado oil)
  • 3 cups powdered sugar
  • 1/4 cup + 2-3 tablespoons whole milk
  • 1/4 cup freeze-dried blueberry powder
  • 1 teaspoon blueberry emulsion or extract

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt.
  2. In a large bowl, mix sugar, melted butter, buttermilk, egg, sour cream, and vanilla until well combined.
  3. Gently fold the dry ingredients into the wet mixture until almost combined; then fold in the frozen blueberries. Cover and refrigerate for 30 minutes.
  4. Heat about 2 inches of oil in a Dutch oven to 355°F.
  5. Line a wire rack with paper towels to catch excess oil.
  6. Use a scoop to drop dough into the hot oil; fry in batches for about 3 minutes per side until golden brown. Transfer to the wire rack.
  7. For the glaze, whisk together powdered sugar, freeze-dried blueberry powder, milk, and blueberry extract until smooth.
  8. Dip each cooled donut into the glaze and return them to the rack.
